I started about 1 month ago and have lost 20 pounds! I have over 100 to go I weight 341 lbs right now I've been doing real good keeping the diet, but in Christmas I am visiting my mother in San Juan PR and I know I will indulge and will have large amounts of carbs the question is After a 5 day high carb binge, how long will it take to return to ketosis mode? Also do you agree one can lose a pound a day if keeping under 1200 calories and under 40 carbs a day? Any consideration to my questions will be greatly appreciated.

Every person's metabolism is different. Therefore, it is hard to say whether you can lose a pound a day if keeping under 1200 calories and under 40 carbs a day. My own experience has been that it is very difficult for me to lose weight. I've had to stay under 900 calories and under 45 carbs to get into ketosis and it took 3-4 weeks to get there. If I deviate slightly, the ketosis goes away. Indulging in carbs is the kiss of death for me. I'm experiencing a plateau right now, which is very frustrating. The last thing that I would do is indulge in carbs (regardless of whether is is Christmas or any other holiday). It would set me back to day 1 of what has already been a long journey. I really don't want to throw away the progress that I have made. So speaking only for myself, there is no way that I would get pressured into eating carbs be it my mother or anyone else. If anything, I would be mentally preparing her to be supportive of my efforts to lose the weight. After all, she would want you to be healthy and not die before your time due to complications of being overweight. It would be a real bummer to not only gain back the 20 pounds you lost, but due to the carbs end up gaining even more than the 20 pounds. I'm telling you, it's not worth the indulgence. You need to not rationalize or make excuses to binge. Just saying...

It's not about calories, so much as hormones (Insulin Primarily). As you have discovered, low calories slowly shut down your metabolism. You eat less, have no energy, and you still can't lose the weight. View the you-tube videos by Dr. Ron Rosedale, and Dr. Jason Fung. It will all make sense.
